15 Aug Baked Egg Avocado
Makes 1 serving | 1 serving protein, 2 servings fat
- 1 large egg
- 1/2 avocado
- 1 tsp green onion, diced
- Pepper, to taste
- Slice avocado in half, long ways. Place in a small baking dish.
- Crack 1 large egg into the inside after removing the avocado seed.
- Bake at 400F for about 10-12 minutes. If you are making multiple servings, increase temp to 425 and cook for about 15 minutes. Just make sure egg white is fully cooked.
- Add green onion and pepper on top to taste!
