Baked Egg Avocado:
-1 large egg
-1 tsp. green onion, diced
-Pepper, to taste
1. Slice avocado in half, long ways. Place in a small baking dish.
2. Crack 1 large egg into the inside after removing the avocado seed.
3. Bake at 400F for about 10-12 minutes. If you are making multiple servings, increase temp to 425 and cook for about 15 minutes. Just make sure egg white is fully cooked.
4. Add green onion and pepper on top to taste!
-Makes 1 serving (1 protein, 2 fat)
