09 Jan Caesar Dressing
INGREDIENTS:
- ⅓ cup mashed ripe avocado (from about ½ an avocado)
- 1 clove garlic, minced (about 1 teaspoon)
- 2 tablespoons fresh lemon juice
- 2 teaspoons Worcestershire sauce
- ½ teaspoon Dijon mustard
- ¼ cup grated Parmesan
- ¾ teaspoon kosher salt
- ½ teaspoon freshly ground pepper
- 1 teaspoon anchovy paste (optional)
- 6 tablespoons water
PREPARATION:
Place all ingredients in a food processor or powerful blender and mix until thoroughly combined and smooth.
