Cauliflower Potatoes

Ingredients

  • 1 cauliflower head
  • 1/4 cup plain Greek yogurt
  • Pinch of salt and white pepper
  • Fresh parsley

Directions

  1. Boil cauliflower until tender.
  2. Using a food processor or blender, puree the boiled cauliflower.
  3. Add the Greek yogurt and spices. Blend in thoroughly.
  4. Place in a bowl and add parsley for garnish.
