15 Aug Cauliflower Potatoes
Ingredients
- 1 cauliflower head
- 1/4 cup plain Greek yogurt
- Pinch of salt and white pepper
- Fresh parsley
Directions
- Boil cauliflower until tender.
- Using a food processor or blender, puree the boiled cauliflower.
- Add the Greek yogurt and spices. Blend in thoroughly.
- Place in a bowl and add parsley for garnish.
