CauliflowerTatoes:
Ingredients:
-1 cauliflower head
-1/4 cup plain Greek yogurt
-Pinch of salt and white pepper
-Fresh parsley
Directions:
1.) Boil cauliflower until tender.
2.) Using a food processor or blender, puree the boiled cauliflower.
3.) Add the Greek yogurt and spices. Blend in thoroughly.
4.) Place in a bowl and add parsley for garnish.
If in Phase One, omit the Greek yogurt and add 1 tbsp. unsweetened almond milk.
