Celeste’s Protein Pancakes

Growing up, my Mom always made us pink, heart-shaped pancakes for breakfast on Valentine’s Day.  It’s a tradition I carried on for my children when they were young.  The problem now is that the syrup and butter toppings and the wheat flour pancakes just don’t fit with our low carb lifestyle.

 

I’ll keep up the tradition this year with a easy option instead.  Try this low carb pancake recipe to start your sweet focused holiday with a protein packed twist.

 

Protein Pancakes:

  • 1 scoop MRM brand protein powder (strawberry flavor will give it he pink tinge, but any flavor works)
  • 1 beaten whole egg + 1 egg white
  • 1/2 tsp vanilla or 1/2 dropper full of vanilla flavored liquid stevia
  • 1/4 tsp baking soda

Topping:

  • Strawberries
  • Trelefia to taste

 

Instructions:

Beat egg with vanilla or liquid stevia, whisk in protein powder and baking soda.  Pour on hot griddle into the shape of a heart (my first attempt never looks beautiful, but it’s the thought that counts right?).

Top with cut up strawberries sweetened with a little Trelefia.  I’ve also used some of my homemade unsweetened applesauce, or you could do some baked cinnamon apples as well.
