Chocolate Avocado Chia Pudding
Ingredients:
2 ripe Hass avocados
1 dropper plain stevia
⅓ c. raw, defatted cacao
1 tbsp. coconut oil
1 tsp. vanilla extract or vanilla bean stevia
½ tsp. chia seeds
Directions:
1. Combine all ingredients in a blender and blend until smooth and silky.
2. Divide pudding among ramekins/cups and refrigerate for at least 1 hour before serving (this allows the chia to thicken).
3. Serve with chopped almonds (optional)
