14 Aug Italian Zoodles
Makes 4 servings | 1 cup = 1 serving | 1 fat, 1 dairy, 1 veggie
Ingredients
- ½ cup of basil, finely chopped
- 3 zucchinis, spiralized
- 1/2 cup of part-skim mozzarella, chopped into 1/2″ chunks OR 1/4 c. Parmesan shredded
- ½ cup of plain pepitas
- 1 cup of heirloom tomatoes, halved
- 1 tsp red wine vinegar
- PHASE 2: 1/8 cup of extra virgin olive oil
Directions
- Using a spiralizer, spiralize 3 zucchinis and place into a large bowl.
- Add chopped basil, tomatoes, pepitas and mozzarella or parm cheese.
- Mix the red wine and olive oil in a separate bowl then pour on to zoodles and toss lightly.
NOTES
Add protein such as ground beef or turkey for a complete meal!
