Italian Zoodles

Makes 4 servings | 1 cup = 1 serving | 1 fat, 1 dairy, 1 veggie

Ingredients

  • ½ cup of basil, finely chopped
  • 3 zucchinis, spiralized
  • 1/2 cup of  part-skim mozzarella, chopped into 1/2″ chunks OR 1/4 c. Parmesan shredded
  • ½ cup of plain pepitas
  • 1 cup of heirloom tomatoes, halved
  • 1 tsp red wine vinegar
  • PHASE 2: 1/8 cup of extra virgin olive oil

Directions

  1. Using a spiralizer, spiralize 3 zucchinis and place into a large bowl.
  2. Add chopped basil, tomatoes, pepitas and mozzarella or parm cheese.
  3. Mix the red wine and olive oil in a separate bowl then pour on to zoodles and toss lightly.

NOTES

Add protein such as ground beef or turkey for a complete meal!
