Minty Mocha Iced Latte

Makes 1 latte


  • ½ cup strong coffee or espresso, chilled
  • 6 oz unsweetened vanilla almond milk
  • 6 fresh mint leaves
  • 2 tsp stevia (preferably peppermint mocha liquid by SweetLeaf)
  • 1 tsp chocolate protein powder (MRM whey isolate) or unsweetened, de-fattened cocoa


  1. In a small pot, heat almond milk over low heat.
  2. Add fresh mint leaves, and heat for 5 minutes.
  3. Remove from heat, and strain off mint leaves.
  4. Stir in sweetener and cocoa powder or protein powder.
  5. Add ice cubes to a large glass. Pour in chilled coffee.
