02 Aug Spicy Chicken and “Zoodles”
Makes 4 servings
- 2 chicken breasts butterflied and halved
- 1/2 tsp sea salt
- 1 1/2 tsp chili powder
- 1/2 tsp cayenne pepper
- 1/4 tsp paprika
- 4 medium zucchini peeled and spiralized
- Nonstick olive oil spray
In a small bowl, mix the spices together. Sprinkle evenly over the chicken breasts.
Heat the oil spray in a skillet on medium to high heat. Add the chicken to the pan and cook for 3-5 minutes on each side, or until the chicken is cooked through and there is no pink left. Remove the chicken and set aside.
Add the zucchini noodles to the pan. Saute for 5 minutes, until the “zoodles” have softened.
Serve the chicken breasts on top of the noodles. Enjoy!
